Favorite Recipe: Alfajorcitos

My favorite recipe is a Peruvian cookie Alfajorcitos.  I have a BIG sweet tooth, so that is why I chose to  share this recipe with you.  My favorite time to make these delicious little cookies is in December.  I have been making these cookies for a few years now, my husband is from Peru, so I can thank him for introducing me to these delicious little cookies!  My kids love these cookies, they love helping me make them.

 Last Christmas I made several dozens of cookies, packaged them up in cute Christmas containers, and gave them out as gifts to some of my friends and my husbands co-workers.  I found the containers at the Dollar Store, you can get a package of the containers 2 for $1.  If you want them to look fancy they sell some nice glass plates there as well, you lay your cookies on the plate, get some of the clear plastic wraps for gift baskets.  You can tie a pretty ribbon at the very top and maybe tie a nice Christmas ornament at the middle of the the ribbon.  


Ingredients:

*1 cup Cornstarch
*1 1/2 stick butter
*1/4 cup powder sugar
*1 large egg yolk
*2 cups flour
*2 1/2 tsp. baking powder
*1 can dulce de leche

In a mixing bowl add the flour, baking powder & cornstarch, then mix butter and egg yolk to make a dough that is soft, if it is too soft, add some more flour. Put dough in a bowl, cover with plastic wrap, and refrigerate for 30 minutes.

Preheat the oven to 350F. Grease a large cookie sheet. 

Put some flower on your surface, roll the dough out to 1/8 inch thick and cut into small circles ( I usually use shot glasses to make the rounds). My kids usually like to help cut the dough into circles.  Put the little circles on the cookie sheet and bake for 10 minutes.

Remove from the sheet and let cool. Spread one cookie with dulce de leche and press a cookie on top, and then roll the cookie in the a bowl of powder sugar until the entire cookie is covered in the powder sugar.  Now you can, grab a glass of milk or some coffee, sit down and enjoy these delicious little cookies, and remember to share them with your friends and loved ones!
